In queste giornate la pioggia non riesce proprio a darci tregua ! I colori che mi circondano, almeno qui in pianura padana, sembrano monocromatici con variazioni che vanno dal grigio scuro al grigio chiaro. Per colorare un po’ la tavola niente di meglio che una crema totalmente vegetariana di porri e patate colorata con la curcuma.
La curcuma è una spezia dal colore giallo brillante, di provenienza asiatica, che oltre ad essere molto utilizzata in cucina, sembra avere anche delle ottime propietà curative e benefiche.
Vi invito a provare questa colorata e confortante crema di porri e patate profumata alla curcuma!
Ingredienti per 2 persone:
- 1 porro di media grandezza
- 3 patate medie
- brodo vegetale bollente
- 1 cucchiaino di curcuma
- sale e pepe
- 2 cucchiai di olio evo
Scaldare in una tegame l’olio evo e unirvi il porro precedentemente tagliato a rondelle.
Pelare le patate e tagliarle a tocchetti ed unirle nel tegame con il porro.
Bagnarli con due mestoli di brodo caldo e lasciar cuocere per 20 minuti circa aggiungendo ancora brodo nel caso si asciugassero troppo.
Aggiungere il cucchiaino di curcuma, il sale e pepe.
Con l’aiuto di un minipiner frullare il tutto fino a renderlo una crema.
Servire la crema calda.
