Nelle ultime settimane questa ricetta ha contagiato un po’ tutti! Chi di voi segue, come me, la trasmissione Masterchef avrà avuto modo di scoprire come è stata “la prima volta”, in ambito culinario ovviamente, dei tre giudici del programma.
Uno di questi, Joe Bastianich, figlio di italiani emigrati negli states, ha ricordato con “nostalgia”, per quanto lui possa esprimere sentimenti così “umani”, questi spaghetti al sugo con le polpette (spaghetti with meat balls) che la mamma e la nonna cucinavano per il pranzo della domenica quando lui era più piccolo!
Adoro cucinare, sperimentare e creare in cucina ma con piatti come questi non c’è storia: niente tecnica, niente regole, questi sono BUONI e basta ! Piatti indelebili che ti fanno stare bene solo a guardarli!
Le dosi indicate sono abbondanti ma la ricetta lo richiede! E’ un piatto unico a tutti gli effetti !

Ingredienti per 4 persone:
- 500 gr pasta tipo spaghetti
- grana padano o parmigiano reggiano per condire
per le polpette:
- 250 gr carne trita di manzo
- 250 gr carne trita di maiale
- 100 gr salsiccia di maiale
- 100 gr di pane raffermo
- latte
- 50 gr di grana padano grattugiato
- 1 uovo
- 50 gr pangrattato
- prezzemolo
- sale e pepe
- farina
- olio d’oliva per friggere
per il sugo di pomodoro:
- 1 scalogno
- 3 cucchiai di olio evo
- 20 gr burro
- 1 cucchiaio di concentrato di pomodoro
- 550 gr polpa di pomodoro
- sale e pepe
- zucchero
Preparare il sugo di pomodoro: tritare finemente lo scalogno e lasciarlo appassire in un tegame con il burro e l’olio evo. Aggiungere la polpa di pomodoro, allungando con un bicchiere d’acqua ed il concentrato di pomodoro. Salare e pepare a proprio piacere. Unire anche un pizzico di zucchero. Cuocere il sugo per almeno 45 minuti a fuoco basso, mescolando di tanto in tanto per non farlo attaccare.
Nel frattempo preparare le polpette: ammollare il pane raffermo con il latte.
In una bacinella versare la carne trita di manzo, la carne trita di maiale, la salsiccia, privata della pelle, l’uovo, il pangrattato, il grana padano grattugiato, il prezzemolo tritato, il sale, il pepe ed il pane ammollato nel latte strizzato.
Impastare bene gli ingredienti con le mani e lavorare il tutto sino a quando tutti gli ingredienti si saranno ben amalgamati. Con l’impasto ottenuto formare delle polpette tonde.
In una capiente padella scaldare l’olio di oliva.
Passare le polpette nella farina e friggerle nell’olio bollente sino a quando si doreranno.
Terminata la frittura delle polpette inserirle nel sugo di pomodoro preparato in precedenza.
In una pentola portare a bollore l’acqua salata e cuocervi gli spaghetti secondo i tempi di cottura indicati sulla confezione (ma sempre assaggiandoli prima!). Scolarli e condirli con il sugo e le polpette. Cospargere con abbondante grana padano o parmigiano reggiano grattugiati.
