Ho trascurato tanto il blog lo so … Nonostante sia la mia passione, la mia valvola di sfogo, il posto più bello in cui rifugiarmi, lo scorso mese ho fatto di tutto per starne alla larga, sebbene abbia preparato e fotografato un sacco di piatti! Un black out totale!
Per questa settimana proporrò tutte le ricette preparare in questo periodo “buio” poi dalla prossima mi dedico al Natale!
La ricetta di oggi è un semplicissimo antipasto autunnale con la zucca, i funghi porcini e una crema di fontina!
Ingredienti:
- 1 confezione di pasta sfoglia
- 150 gr zucca già pulita dalla buccia
- 150 gr funghi porcini freschi
- 150 gr di fontina
- 4/5 cucchiai di latte intero
- 1 spicchio d’aglio
- rosmarino
- olio evo
- sale e pepe
- erba cipollina per guarnire
Per prima cosa cuocere la zucca: tagliarla a pezzetti e metterli su di una teglia rivestita con carta da forno. Condire la zucca con olio, sale, pepe e rosmarino e cuocere in forno caldo 180° per 20/25 minuti.
Preparare i cestini di pasta sfoglia: con l’aiuto di un coppapasta tondo ricavare dal foglio di pasta sfoglia dei cerchi di circa 7/8 cm di diametro. Disporre ciascun cerchio di sfoglia nell’incavo di in una teglia da muffin dando la forma appunto di un cestino. In mancanza di una teglia da muffin è possibile utilizzare i pirottini in alluminio. Bucherellare con una forchetta la base dei cestini in modo che la sfoglia non si gonfi.
Cuocere i cestini di sfoglia in forno caldo 180° per 10/12 minuti e lasciare raffreddare.
Nel frattempo pulire bene i funghi con uno spazzolino e un panno morbido e inumidito per eliminare tutti gli eventuali residui di terra. Tagliarli a pezzetti.
In una padella scaldare due cucchiai di olio evo e lo spicchio d’aglio. Aggiungere i funghi e lasciare che perdano tutta l’acqua. Cuocere per qualche minuto sino a quando saranno ben asciutti. Salare e pepare.
Frullare la zucca con l’aiuto di un minipimer fino a renderla una crema liscia.
In ultimo grattugiare la fontina e scioglierla in un pentolino con il latte.
Riempire i cestini di sfoglia raffreddati con la crema di zucca, aggiungere i funghi porcini e guarnire con un filo di erba cipollino. Servire nel piatto accompagnato dalla fonduta di fontina.
