Ciao a tutti!
eccovi un primo piatto semplice, veloce e light!
Ingredienti (x 4 persone)
250 gr spaghetti di riso
1 carota media
1 zucchina media
1 cipollotto
1 vaschetta di germogli di soia
2 cucchiai di salsa di soia
sale e olio evo qb
Portare a bollore 2 lt e mezzo di acqua (ce ne vuole sempre 1 litro per ogni etto di pasta) e cuocervi gli spaghetti secondo il tempo indicato sulla confezione.
Nel frattempo pulire il cipollotto e tagliarlo a julienne.
In una padella aggiungere due cucchiai di olio evo e successivamente il cipollotto e farlo soffriggere.
Lavare e pelare la carota e tagliarla a julienne (io ho usato l’apposita grattuggia); unirla al soffritto di cipollotto.
Lavare la zucchina e tagliare a julienne ed unirla , insieme ai germogli di soia, con la carota e il cipollotto.
Sfumare le verdure con la salsa di soia e continuare la cottura. Prima di salare consiglio di assaggiare le verdure perchè già la salsa di soia insaporisce molto!
Avendo tagliato le verdure a julienne la cottura delle stesse è molto breve, il tempo che colle l’acqua e cuoce la pasta ….
Quando gli spaghetti sono pronti, scolarli e unirli alle verdure e mescolare.
Servire caldi e condire a piacere con altra salsa di soia.
